For my 30th birthday, my husband took me to New Orleans for Mardis Gras. It was a fun and crazy way to mark the milestone. On that trip I tried bananas foster for the first time and I was hooked.
We have been growing bananas for a few years now. We don’t have ideal conditions for them, but they do grow and we get a few hands of small bananas every year.
Since we only get them every once in awhile, I like to make something really special with them. For us, this is bananas foster.
I love this desert as it simple, uses fresh produce, comes together really quickly, and is such a fun thing to prepare when you have guests or for a special occasion.
I start by cutting up my bananas and pulling together my ingredients. My bananas are quite small, so I slice them once length wise. If you have full size bananas, I recommend cutting them once width wise and then cutting them length wise, but there really isn’t a wrong way.
Then, I melt in a non stick fry pan a 1/4 cup of butter, which is a half of a stick. When the butter is melted I add 1/2 cup brown sugar, a teaspoon of good quality vanilla, and a pinch of salt. Mix the additions together with the butter in the fry pan until you have a nice syrup.
Once it is bubbling and cooking nicely, I add the bananas spaced out throughout the pan in a single layer.
Cook the bananas for a few minutes until tender. I also like to spoon the sauce over the top.
Now it is time to add 1/2 cup of rum. I like to use a dark rum but any rum will work. I also add 1/4 cup of Kahlua if I have it. Once the liquor is mixed in, use a long utility lighter, like one you would use for a barbecue, to light the pan. Be extra careful when you do this as the liquor will light right up. Stand back while the flame is lit. Once the flame extinguishes on its own, turn off the heat, you are ready to serve.
To serve, spoon the cooked bananas onto a plate, bowl or shallow dish. Add a spoonful (or two) of good quality vanilla ice cream. I love Costco’s vanilla ice cream, so that is what we use. I then take the left over syrup from the pan and spoon it over the top. Serve right away.
- 3 large bananas
- 1/4 cup butter (1/2 stick)
- 1/2 cup brown sugar
- 1 teaspoon vanilla
- pinch of salt
- 1/2 cup rum
- 1/4 cup coffee liquor (Kahlua or similar) **Optional
